Maftoul is often described as Palestinian couscous, but it is really its own tradition. Made from whole wheat bulgur and flour, each grain is carefully hand-rolled using methods passed down through generations.

Produced by women's cooperatives in Palestine, maftoul provides income for farming families while preserving culinary traditions that might otherwise be lost.

Its hearty texture makes it a natural companion to stews, roasted vegetables, and soups. It can also be served cold in salads with herbs, olive oil, and dried fruit.

Very good. Nice to find both whole grain and organic. I Iike it just as well without the initial coating in oil.

Organic Maftoul (Couscous)

This is fantastic whole wheat cous cous. We ordered two boxes this time. It works great with all kinds of foods and reheats well, too. I agree the reviewer who said to toast it first. I also use chicken broth as the liquid and that makes it super delicious, as well.

this is absolutely the best couscous I have ever had. My husband got me some for my birthday, and I just had to have some more. I love the whole wheat. Follow the instructions, as it needs to be toasted to develop the flavor.
